Tomato-Basil Relish

    Ingredients:

    • 4 tablespoons olive oil
    • 3/4 pound tomatoes, seeded and roughly chopped
    • 6 large garlic cloves, minced
    • 1/4 cup fresh basil, chopped
    • 1 tablespoon red wine vinegar

    Directions:

    1. Heat oil in large skillet over medium-high heat.
    2. Add tomatoes and garlic.
    3. Sauté until tomatoes soften, about 5 minutes.
    4. Add basil and vinegar.
    5. Season with salt and pepper.
    6. Serve at room temperature.
